Paul Bartolotta is Chef & Co-Owner of The Bartolotta Restaurant Group
Paul Bartolotta brings more than 30 years of culinary experience to offer his vision, expertise and strengths in new business development to The Bartolotta Restaurants. Paul, alongside his brother Joe, opened their first restaurant, Ristorante Bartolotta in the urban suburb of Wauwatosa outside of Milwaukee, WI in 1993.
In 1980, Paul graduated with a hospitality degree from Milwaukee Area Technical College and his cultural education began after in New York City. He started working for New York restaurateur, Tony May, owner at the time of the Rainbow Room and founder of Gruppo Ristoratori Italiani, the international food society devoted to maintaining the standards of classical Italian colleagues. Initially instituted as a six-month tour of duty, this stint evolved into a seven-year education.
Paul then moved on to become the Executive Chef/Managing Partner of Spiaggia, located in Chicago, from 1991 to 2000. Paul was winner of the coveted James Beard Best Midwest Chef Award in 1994 and The James Beard Award for Best Chef Southwest in 2009, Bartolotta directed Spiaggia to every major national fine dining award. In 2005, Paul debuted Ristorante di Mare in the Wynn Hotel in Las Vegas, Nevada featuring fresh seafood flown in daily from Italy alongside a stellar wine list and high reviews from national press.
Currently Paul runs 17 fine dining and restaurants as well as catering units with his brother Joe in the Milwaukee area.
